It's cheap, quick to cook and versatile. So step away from the spaghetti bolognese and try one of these instead
MInce. It’s cheaper than a lot of other cuts of meat, and extremely versatile. Need some weeknight meal inspiration? Then check out this list, which proves there’s definitely more to mince than Spag Bol and Shepherd’s Pie…
Dirty Rice
Dirty Rice
[Creole Contessa]
Yep, so this doesn’t sound very appetising, but it’s actually lovely. Dirty rice is a Creole dish where rice is cooked with meat - which often includes chopped offal - along with vegetables like onions and
peppers and seasoned with herbs and spices. This version of Dirty Rice comes from the blog Creole Contessa and it uses turkey mince, although she says you could use pork or chicken mince instead, if you like.
Cheeseburger Egg Rolls
[Divian Conner]
So these Bacon Cheeseburger Eggrolls are a bit different. They were created by Divian Conner and they’re kind of like a spring roll with a cheeseburger filling. After stuffing them with beef, seasonings and cheese, if frying them is a step too far for you, you can always cook them in the oven.
Lamb Pitas
[Vodka and Biscuits]
“This was one hell of a pita and oh my goodness I am so excited for you”, writes Lindsay, from the blog Vodka and Biscuits. She’s talking about her Grilled Lamb Pitas with Pistachio and Mint Pesto. The lamb mince is seasoned with dill, garlic and Mediterranean spices and then it’s grilled and served with the flatbread and the special pesto. It sounds as luscious as it looks. A fab alternative to burger night.
Meatzza
[Can You Stay For Dinner]
As grain-free and gluten-free diets become more popular, people are getting more creative with what to make their pizza bases out of. There are cauliflower, carrot and mushroom bases - and yep, there are meat ones, too. You basically make a huge, flattened out burger, before cooking it thoroughly in the oven and then adding your toppings. Check out this Pepperoni Meatzza from Can You Stay For Dinner.
An AWESOME Burger
[Lady and Pups]
If you’re going to make a burger, you might as well make one like this. Pile on your favourite toppings, leaves, cheeses and sauces. This piece of beauty comes from the blog Lady and Pups. It’s a Mexican Chorizo and Garlic Shrimp Burger. Home-made burgers are always the best, anyway. Go, on, stare at it a bit longer. We won’t judge.
Minced Beef Wellington
[Oh Sweet Day]
Forget forking out on a whole (expensive) beef fillet and wrap your pastry around this instead. This Minced Beef Wellington is from the blog Oh Sweet Day and - while the traditional version is fine for special occasions - this one makes a lovely weeknight family meal that won’t cost you a fortune. You can change up the veggies and spices to suit you, too.
Meatloaf
[Can You Stay For Dinner]
OK. Mix the mince with chopped onions, veggies and herbs and spices. A bit of salt and pepper. Dump it onto a roasting tray in a rough ‘loaf’ shape (or use a loaf tin if you have one). Slide into the oven until it’s cooked all the way through, and you’ve got meatloaf. This Honey Barbecue Meatloaf, from the blog Can You Stay For Dinner looks gorgeous, and comes with a sticky BBQ sauce. Gorgeous with some salad and sweet potato fries, or the more traditional mash and veg.
Korean Beef
[Kitchen Simplicity]
A quick mid-week meal or something to take your time over at the weekend, this Korean Beef Bowl comes from the blog Kitchen Simplicity. It’s basically a stir-fry, with minced beef and some seasonings, so it can be on the table nice and quick. Next time you plan on making a stir-fry, why not give this a go instead?
Stuffed Meatballs
[The Healthy Foodie]
Wait. What’s that stuffed with? Cheese? Olives? Nope, it’s avocado. These Avocado Stuffed Meatballs were created by The Healthy Foodie, who had seen burgers stuffed with avocado all over the internet and wanted “an easier, less messy and more portable” version. And you don’t need to stop there. How about stuffing meatballs with cheese, chopped olives, veggies - just mould the raw mince around the filling and cook thoroughly.
